Patiently aged oak in a selection of darkly coloured Oloroso Sherry oak casks, most of which have been used for a single season of Sherry making, the perfect treatment for infusing The Macallan with deepness of colour and magnificent complexity of intense flavour. As the aging casks reach the peak of maturity, the lots of Whisky are gently reduced to 46.5% alcohol with natural spring water drawn from bespoke wells, hidden deep beneath the Macallan estate cellars at Craigellachie near the confluence of Rivers Fiddich and Spey.

The Macallan is treated to an extravagant triple maturation in a unique selection of seasoned oak casks. There are three marques produced here at the tip of Kintyre, Longrow being the youngest, formulated as an answer to the smoky, peaty styles which hail from Islay Isle. Established at Speyside 1893 and built on the site of a medieval chapel, Longmorn Distillery draw water from underground springs and mature their Malt in seasoned casks. Longmorn are one of the few distilleries which were founded during the Whisky boom of the late 19th century and have managed to survive until today. Malt and mash, vanilla tannins, nutmeg and sawdust floor, smokiness and roasted nuts, well oaked and fruity with liquorice and punchy spice, festive fruits and dried apple linger long on a finish, evocative of Bourbon cask, kernel oak.

Single Malt Whisky is the flagship spirit of the Lark Distillery. First produced in small quantities in 1992, Lark has cellared sufficient quantities to consistently answer the call for a fine Australian Whisky at home and abroad. Distilled from Tasmanian (Franklin) barley, malted at the Cascade Brewery. Lark use Tasmanian peat frawn from the estate's own private bog in the central highlands. The whisky is lightly peated (approximately 50% of the malt is peated) and resembles in flavour a Scottish Speyside or Highland Whisky.

Laphroaig distillery has been an integral part of Islay's community for two centuries. While the full history of Laphroaig has been lost in the anals of time, folklore recounts a period of Irish settlement and distillation which was handed down to the locals. Laphroaig takes inspiration from the small casks used for Scotch Whisky in the 19th century and frequently transported across the Glens by packhorse. As the industry grew, they fell into disuse – bigger and more cost effective barrels became the norm, for maturation and transportation. However as single malt lovers may know, the relationship between the barrels and the maturing spirit is critical. Small cask size gives up to 30% greater contact with the wood, greatly intensifying the maturation process and enhancing the whisky.

Lagavulin were established 1816, sharing their site with Kildalton Distillery which was founded the following year. They merged operations from 1837 until 1908, when the managers of Lagavulin decided to erect the Malt Mill Whiskyworks, after an altercation with neighbouring Laphroaig. The feud between the two rivals began when restless Peter Mackie headhunted and hired the Laphroaig Still Master. Lagavulin later came under control of White Horse which still includes an essential component of Lagavulin Malt to this day.

Knockando distillery was founded in 1898 by John Thomson on the river Spey, and carries the distinction of being the first Speyside distillery to use electricity. Closed two years after its creation, it passed for a while into the hands of Gilbey Ltd, the famous London gin producers. After further takeovers and refurbishments, the distillery met with a resurgence in demand, it began marketing it's Single Malts as Vintages. Today, only 8% of the production is marketed under the Knockando label, the remaining part being used for the blends J&B and Spey Royal.
